Rose Fennel Tea

Boil one cup of water, stir in 1 teaspoon fennel seeds, cover and reduce heat. Allow to simmer for a few minutes then turn off heat. After it has cooled, add 4-5 mint leaves and allow to steep 5-10 minutes. Pour through a tea strainer into a mug and add 1 teaspoon of rose water. Makes 1 serving.
