Banana Pecan Ice Cream


2 ripe bananas, peeled and frozen in one inch thick slices

1/4 cup canned coconut milk - From the can, full fat, blended and chilled

1 teaspoon vanilla extract

2 tablespoons pecans

pinch salt


Peel the bananas, cut into 1 inch slices, place on a baking sheet or paper plate and put into freezer for about an hour. Place the frozen bananas, coconut milk, vanilla, pecans, and salt in the food process and spin for 3-5 minutes until combined. Feel free to add blueberries, strawberries, or anything you find delicious. Scoop into bowls and enjoy!
